The remainder of the smoked bluefish was put in the pies along with the freshly caught striped bass. We used Rick Stein's recipe which calls for 4 hardboiled eggs, a delicious addition - but instead of the potato topping we used Stephanie Alexander's shortcrust pastry recipe - quite possibly the best fish pie I have ever tasted, and my fisherman husband deserves all the credit for catching the fish and cooking, not one, but three pies.
I made a kale and tomato hash, the dinosaur kale freshly picked from the Montauk Community Garden and one juicy beefsteak from our garden - trying to make them last, just a couple left now. The changing of the season......but the stripers are here.
